A quick and flavorful vegetarian curry featuring sweet potatoes and chickpeas in a creamy coconut sauce.
Ingredients

sweet potatoes, peeled and diced

coconut milk

chickpeas, drained and rinsed

onion, chopped

garlic, minced

curry powder

Instructions
Heat oil in a large pot over medium heat.
Sauté onion for 5 minutes until softened.
Add garlic, curry powder, and ginger; cook for 1 minute.
Add sweet potatoes, coconut milk, chickpeas, salt, and pepper; simmer until tender, about 15 minutes.
Garnish with cilantro before serving.
