A quick and flavorful vegetarian curry featuring sweet potatoes and chickpeas in a creamy coconut sauce.

Ingredients

Vegetables

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (14 oz) coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground ginger
  • 2 tablespoons vegetable oil
  • to taste salt and pepper
  • for garnish fresh cilantro

Instructions 

  • Heat oil in a large pot over medium heat.
  • Sauté onion for 5 minutes until softened.
  • Add garlic, curry powder, and ginger; cook for 1 minute.
  • Add sweet potatoes, coconut milk, chickpeas, salt, and pepper; simmer until tender, about 15 minutes.
  • Garnish with cilantro before serving.

Notes

Adjust seasoning to taste and serve with rice or bread.
