Ingredients

ground beef or turkey

taco seasoning

black beans, drained and rinsed

corn, frozen or canned

diced tomatoes

shredded cheese (cheddar or mexican blend)

avocado
diced avocado
sour cream or greek yogurt
for serving

Instructions
Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45-60 minutes.
Cook ground beef or turkey until browned; drain excess fat.
Add taco seasoning, black beans, corn, and tomatoes; cook 5-7 minutes. Season with salt and pepper.
Let sweet potatoes cool slightly, then cut in half lengthwise. Fluff insides and fill with meat mixture.
Top with cheese, avocado, sour cream, and cilantro. Serve warm.
Notes
For extra flavor, add a squeeze of lime or hot sauce.
