A delicious and healthy meal featuring baked sweet potatoes filled with flavorful taco ingredients, topped with cheese and fresh toppings.

Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or mexican blend)
  • 1 avocado diced avocado
  • sour cream or greek yogurt for serving sour cream or greek yogurt
  • chopped cilantro for garnish chopped cilantro
  • to taste salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45-60 minutes.
  • Cook ground beef or turkey until browned; drain excess fat.
  • Add taco seasoning, black beans, corn, and tomatoes; cook 5-7 minutes. Season with salt and pepper.
  • Let sweet potatoes cool slightly, then cut in half lengthwise. Fluff insides and fill with meat mixture.
  • Top with cheese, avocado, sour cream, and cilantro. Serve warm.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
