A refreshing and simple salad made with ripe tomatoes, cucumbers, and fresh basil.

Ingredients

  • 4 ripe tomatoes (chopped)
  • 1/2 red onion (thinly sliced)
  • 1 cucumber (diced)
  • 1/4 cup fresh basil leaves (chopped)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt (to taste)
  • pepper (to taste)

Instructions 

  • In a large mixing bowl, combine the chopped tomatoes, sliced red onion, and diced cucumber.
  • Add the chopped basil leaves to the bowl.
  • In a small bowl, whisk together the olive oil and balsamic vinegar.
  • Pour the dressing over the salad and toss gently to combine.
  • Season with salt and pepper to taste.
  • Serve immediately or let it sit for 10 minutes to allow the flavors to meld.

Notes

For added flavor, let the salad sit for a few minutes before serving.
