Ingredients

Vegetables

  • 1 medium zucchini, spiralized
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for garnish fresh basil

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Sauté red onion and bell pepper until softened, about 3-5 minutes.
  • Add cherry tomatoes and cook for 2-3 minutes until they soften.
  • Stir in spinach and zucchini, then season with garlic powder, salt, and pepper. Cook for 3-4 minutes until zucchini is tender.
  • Remove from heat, drizzle with balsamic vinegar, and garnish with basil. Serve warm.

Notes

Use fresh basil for the best flavor and adjust salt and pepper to taste.
