A delicious and easy-to-make vegetarian lasagna perfect for family dinners and gatherings.

Ingredients

Noodles

  • 9 pieces lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 2 cups marinara sauce
  • 1 piece zucchini, sliced
  • 1 diced bell pepper
  • 1 cup spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C). Cook noodles, then layer with ricotta, vegetables, sauce, and cheese in a baking dish. Cover and bake for 25 minutes, then uncover and bake 15-20 minutes until bubbly.

Notes

You can add more vegetables or cheese as desired for extra flavor.
