Ingredients
Dough

granulated sugar

unsalted butter, cold and cubed

egg yolk

Filling

ricotta cheese

cream cheese, softened

powdered sugar

vanilla extract
zest of 1 lemon
lemon zest

fresh lemon juice

Instructions
Mix flour, sugar, and salt; cut in cold butter until coarse crumbs. Add egg yolk and ice water; form dough, chill 30 mins.
Preheat oven to 350°F (175°C). Roll out dough, fit into tart pan, prick bottom, and bake 15-20 mins until golden. Cool.
Beat ricotta, cream cheese, powdered sugar, vanilla, lemon zest, and lemon juice until smooth. Spread into cooled shell.
Optional: Garnish with berries and mint. Chill for at least 1 hour before serving.
Notes
