  • 1 pound turkey breast, bone-in and skin-on
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 4 carrots carrots, chopped
  • 3 potatoes potatoes, diced
  • 1 onion onion, quartered
  • 2 cups chicken broth
  • optional fresh parsley for garnish (optional)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix olive oil, salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika; rub over turkey.
  • Arrange vegetables in a roasting pan, place turkey on top, pour broth, cover with foil.
  • Roast for 1.5 to 2 hours, remove foil last 30 minutes for crisp skin.
  • Check for 165°F internal temp, rest for 10-15 minutes, then serve garnished with parsley.
