  • 2 carrots sliced carrots
  • 2 parsnips sliced parsnips
  • 1 red onion chopped red onion
  • 1 cup baby potatoes, halved

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix salt, pepper, garlic powder, paprika, and thyme; rub on turkey with olive oil.
  • Place turkey on a roasting pan; surround with vegetables.
  • Roast for 1.5-2 hours until internal temp reaches 165°F (74°C); baste occasionally.
  • Rest for 10 minutes, then slice and serve with vegetables, garnished with herbs.
