  • 1 cup just egg
  • 1/4 cup bell peppers, diced
  • 1/4 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/4 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 tablespoon fresh herbs (optional) (for garnish)

Instructions 

  • Whisk 1 cup of JUST Egg until frothy.
  • Add vegetables and season with salt and pepper.
  • Heat olive oil in a skillet over medium heat.
  • Pour mixture into skillet and cook 3-5 minutes until edges set.
  • Flip and cook 2-3 minutes until fully cooked. Garnish and serve.
