Ingredients

Protein

  • 1.5 lbs chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 teaspoon italian seasoning
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions 

  • Set Instant Pot to 'Sauté' and heat olive oil.
  • Season chicken with salt, pepper, and Italian seasoning, then brown on both sides.
  • Add garlic, sauté 1 minute, then pour in chicken broth to deglaze.
  • Return chicken, close lid, cook on 'Manual' for 10 minutes, then quick release.
  • Stir in heavy cream and Parmesan until smooth, then coat chicken and warm through.
  • Serve hot, garnished with parsley.

Notes

For a richer flavor, let the sauce simmer a few extra minutes after adding the cheese.
