A delicious and easy crockpot dinner combining tender chicken, flavorful potatoes, and a cheesy garlic Parmesan sauce.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 1 pound baby potatoes, halved

Seasonings & Oils

  • 4 cloves garlic, minced
  • 1 cup grated parmesan cheese
  • 1 teaspoon italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth
  • 2 tablespoons olive oil

Garnish

  • fresh parsley for garnish (optional)

Instructions 

  • Mix garlic, Parmesan, Italian seasoning, salt, pepper, and olive oil.
  • Coat chicken with the mixture and place in crockpot over potatoes.
  • Add chicken broth and cook on low for 6-7 hours.
  • Shred chicken and mix with potatoes before serving.
  • Garnish with parsley if desired and serve hot.

Notes

For extra flavor, sprinkle additional Parmesan or herbs before serving.
