Instructions
Heat 2 tablespoons olive oil in a skillet. Cook potatoes until golden and tender, then set aside.
Season steak with salt, pepper, and herbs. Sear in remaining oil and butter until browned, 2-3 minutes per side.
Add garlic and remaining butter; sauté until fragrant. Return potatoes to pan and toss.
Cook for 1-2 minutes to heat through. Garnish with parsley and serve hot.
Notes
