Ingredients
Green Beans
1poundfresh green beans, trimmed
1cupmushrooms, sliced
1cupcoconut milk
1/4cupnutritional yeast
2tablespoonscoconut oil
2clovesgarlic, minced
1teaspoononion powder
1teaspoongarlic powder
to tastesalt and pepper
1/2cupalmond flour(for topping)
1/4cupchopped fresh parsley(for garnish)
Instructions
Preheat oven to 350°F (175°C). Blanch green beans for 3-4 minutes, drain.
Sauté mushrooms and garlic in coconut oil until tender.
Blend coconut milk, nutritional yeast, onion powder, garlic powder, salt, and pepper until smooth.
Mix green beans, mushrooms, and sauce; transfer to baking dish.
Sprinkle almond flour on top and bake for 25-30 minutes until golden.
Garnish with chopped parsley before serving.
Notes
For extra crunch, add more almond flour topping or toasted nuts.
