Ingredients

Green Beans

  • 1 pound fresh green beans, trimmed
  • 1 cup mushrooms, sliced
  • 1 cup coconut milk
  • 1/4 cup nutritional yeast
  • 2 tablespoons coconut oil
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 1/2 cup almond flour (for topping)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions 

  • Preheat oven to 350°F (175°C). Blanch green beans for 3-4 minutes, drain.
  • Sauté mushrooms and garlic in coconut oil until tender.
  • Blend coconut milk, nutritional yeast, onion powder, garlic powder, salt, and pepper until smooth.
  • Mix green beans, mushrooms, and sauce; transfer to baking dish.
  • Sprinkle almond flour on top and bake for 25-30 minutes until golden.
  • Garnish with chopped parsley before serving.

Notes

For extra crunch, add more almond flour topping or toasted nuts.
