Ingredients

  • 2 cup grape tomatoes (halved)
  • 1 medium cucumber (diced)
  • 1 small red onion (thinly sliced)
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • salt (to taste)
  • pepper (to taste)
  • fresh basil leaves (for garnish (optional))

Instructions 

  • In a large mixing bowl, combine the halved grape tomatoes, diced cucumber, and thinly sliced red onion.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Let the salad sit for about 10 minutes to allow the flavors to meld.
  • Garnish with fresh basil leaves if desired, and serve chilled or at room temperature.

Notes

This salad can be made ahead of time and stored in the refrigerator for a refreshing side dish.
