A flavorful and refreshing Greek Potato Salad with Yukon Gold potatoes, Kalamata olives, feta cheese, and a tangy dressing. Perfect as a side dish or light meal.

Ingredients

Salad Ingredients

  • 2 pounds Yukon Gold potatoes (peeled and cubed)
  • 1/2 cup Kalamata olives (pitted and halved)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons red grape juice vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions 

  • Boil potatoes until tender. Drain and cool.
  • Combine potatoes, olives, feta, red onion, and parsley in a bowl.
  • Whisk together olive oil, vinegar, lemon juice, oregano, salt, and pepper.
  • Pour dressing over potato mixture and toss gently.
  • Serve immediately or chill.

Notes

For a creamier salad, add a tablespoon of Greek yogurt to the dressing.
