1/2cupKalamata olives(pitted and halved)
1/2cupfeta cheese(crumbled)
1/4cupred onion(thinly sliced)
1/4cupfresh parsley(chopped)
Dressing
2tablespoonsolive oil
2tablespoonsred grape juice vinegar
1tablespoonlemon juice
1teaspoondried oregano
1/2teaspoonsalt
1/4teaspoonblack pepper
Instructions
Boil potatoes until tender. Drain and cool.
Combine potatoes, olives, feta, red onion, and parsley in a bowl.
Whisk together olive oil, vinegar, lemon juice, oregano, salt, and pepper.
Pour dressing over potato mixture and toss gently.
Serve immediately or chill.
