A cheesy, flavorful casserole combining cauliflower, green chiles, and rich cheeses for a satisfying low-carb meal.

Instructions
Preheat oven to 375°F (190°C) and grease a baking dish.
Melt butter in a skillet; sauté onion and celery until soft.
Add cauliflower rice; cook 3–4 minutes. Mix in chiles, sour cream, cream, salt, pepper, and garlic.
Fold in half of each cheese, transfer to dish, top with remaining cheese, and bake 20–25 minutes.
Notes
For extra flavor, add a pinch of paprika or cayenne pepper.
