A cheesy, flavorful casserole combining cauliflower, green chiles, and rich cheeses for a satisfying low-carb meal.

Ingredients

Dairy

  • 2 tbsp butter
  • ¾ cup chopped onion
  • ¾ cup chopped celery
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 oz canned green chiles, drained
  • ½ cup full-fat sour cream
  • ½ cup heavy cream
  • tsp salt
  • ½ tsp black pepper
  • ½ tsp granulated garlic

Instructions 

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • Melt butter in a skillet; sauté onion and celery until soft.
  • Add cauliflower rice; cook 3–4 minutes. Mix in chiles, sour cream, cream, salt, pepper, and garlic.
  • Fold in half of each cheese, transfer to dish, top with remaining cheese, and bake 20–25 minutes.

Notes

For extra flavor, add a pinch of paprika or cayenne pepper.
