This vibrant Green Goddess Avocado Salad is packed with fresh greens and herbs, all tossed in a creamy, zesty avocado dressing. It's a refreshing and healthy meal perfect for any occasion.

Ingredients

For the Salad

  • 4 cups romaine lettuce (chopped)
  • 1 cup baby spinach
  • 1 cup cucumber (diced)
  • 1 cup snap peas (sliced)
  • 1/2 cup radishes (thinly sliced)
  • 1/4 cup fresh chives (chopped)
  • 1/4 cup fresh parsley (chopped)

For the Green Goddess Dressing

  • 1 ripe avocado (peeled and pitted)
  • 1/2 cup Greek yogurt ((use plant-based for vegan option))
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons fresh tarragon leaves
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2-3 tablespoons water ((to adjust consistency))

Instructions 

  • Combine avocado, Greek yogurt, basil, parsley, tarragon, lemon juice, olive oil, garlic, Dijon mustard, salt, and pepper in a blender or food processor. Blend until smooth, adding water as needed for a pourable consistency. Taste and adjust seasoning.
  • In a large bowl, combine romaine lettuce, spinach, cucumber, snap peas, radishes, chives, and chopped parsley.
  • Drizzle the avocado dressing over the salad and toss gently to coat. Serve immediately, garnished with extra herbs if desired.

Notes

For a heartier meal, add grilled chicken, chickpeas, or hard-boiled eggs to the salad.
