Ingredients
Green Goddess Dressing
1/2cupplain Greek yogurt
2tablespoonsmayonnaise
1/2ripe avocado
1/2cupfresh parsley leaves
1/2cupfresh basil leaves
1green onion, chopped
1clovegarlic, minced
1tablespoonfresh lemon juice
1tablespoonred grape juice vinegar
to tasteKosher salt and black pepper
1tablespoonwater (optional)
Chicken Salad
4cupsshredded chicken (rotisserie preferred)
1/2cupdiced celery
1/2cupdiced cucumber
1/4cupdiced red onion
to tasteKosher salt and black pepper
Instructions
Blend dressing ingredients until smooth, adding water if needed.
Mix chicken, celery, cucumber, and red onion in a bowl.
Pour dressing over chicken mixture and stir. Season to taste.
