Ingredients

Green Goddess Dressing

  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1/2 ripe avocado
  • 1/2 cup fresh parsley leaves
  • 1/2 cup fresh basil leaves
  • 1 green onion, chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red grape juice vinegar
  • to taste Kosher salt and black pepper
  • 1 tablespoon water (optional)

Chicken Salad

  • 4 cups shredded chicken (rotisserie preferred)
  • 1/2 cup diced celery
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • to taste Kosher salt and black pepper

Instructions 

  • Blend dressing ingredients until smooth, adding water if needed.
  • Mix chicken, celery, cucumber, and red onion in a bowl.
  • Pour dressing over chicken mixture and stir. Season to taste.
  • Serve on toast, in a sandwich, wrap, or lettuce wrap.

Notes

For a tangier flavor, add a bit more lemon juice or red grape juice vinegar.
