Delicious and easy chicken salad sandwiches with a flavorful Green Goddess twist. Perfect for a quick lunch or picnic!

Ingredients

Chicken Salad

  • 2 cups cooked, shredded chicken
  • 1/2 cup mayonnaise
  • 1/4 cup Green Goddess dressing
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped fresh parsley
  • to taste Salt and pepper

Sandwich Assembly

  • 8 slices your favorite bread
  • as needed Lettuce leaves (optional)
  • as needed Sliced tomato (optional)

Instructions 

  • Combine chicken, mayonnaise, Green Goddess dressing, celery, red onion, and parsley in a bowl.
  • Season with salt and pepper to taste.
  • Mix well until combined.
  • Spread chicken salad on 4 slices of bread.
  • Top with lettuce and tomato, if desired.
  • Cover with remaining bread slices.
  • Cut in half and serve immediately.

Notes

For a lighter version, use Greek yogurt instead of mayonnaise.
