  • 2 Tbsps Extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning

Salad

  • 2 bunches Your favorite greens, roughly chopped (I used kale and baby lettuce)
  • 1 organic cucumber, peeled + chopped
  • 1 green tomato, diced
  • 2 cups crispy Lemon Herb Quinoa
  • 1 Haas avocado, pitted, + chopped into chunks
  • 1 cup freshly-grated parmesan
  • 1-2 cups Green goddess dressing

Notes

Adjust the amount of green goddess dressing to your liking. For a vegetarian option, omit the chicken and add chickpeas or white beans.
