Ingredients

Salad Ingredients

  • 2 cups English cucumber (diced)
  • 1 large ripe avocado (diced)
  • 2 cups romaine lettuce (chopped)
  • 1 cup sugar snap peas (thinly sliced)
  • 4 green onions (thinly sliced)
  • ¼ cup fresh parsley (roughly chopped)
  • ¼ cup fresh chives (chopped)
  • ¼ cup fresh basil leaves (chopped)

Green Goddess Dressing

  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon white grape juice vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic (minced)
  • 2 anchovy fillets anchovy fillets or 1 teaspoon capers
  • ¼ cup fresh parsley
  • 2 tablespoons fresh tarragon
  • 1 tablespoon fresh chives
  • Salt and freshly ground black pepper (to taste)

Instructions 

  • Blend dressing ingredients until smooth. Adjust seasoning.
  • Combine salad ingredients in a bowl.
  • Drizzle dressing over salad and toss gently.
  • Plate immediately and garnish with herbs.

Notes

For a vegan option, substitute the Greek yogurt with a plant-based alternative and omit the anchovy fillets.
