115 oz canchickpeas(rinsed and drained)
1cupcabbage(finely diced)
1/4cupred onion(finely diced)
1/3English Cucumber(finely diced)
1jalapeño pepper(finely diced)
Sandwich Assembly
6-8Slicesyour favorite bread

Dijon Mustard
Instructions
Blend all dressing ingredients until smooth.
Mash chickpeas in a bowl.
Add cabbage, onion, cucumber, jalapeno, salt, and pepper to the chickpeas and mix.
Pour dressing over the salad and toss.
