A delicious and healthy vegetarian meal featuring grilled chickpeas and vegetables stuffed in whole wheat pitas, perfect for a quick lunch or dinner.
Ingredients

chickpeas, drained and rinsed

smoked paprika

garlic powder

red bell pepper

zucchini

Instructions
Preheat the grill to medium-high heat.
Mix chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill for 10 minutes, stirring occasionally.
Toss sliced vegetables in olive oil, salt, and pepper, then grill for 5-7 minutes until tender and charred.
Warm pitas on the grill for 1-2 minutes each side.
Spread hummus inside pitas, add grilled chickpeas and vegetables, then top with lettuce or spinach. Serve with lemon wedges.
Notes
For extra flavor, add fresh herbs or a drizzle of tahini.
