A delicious and healthy vegetarian meal featuring grilled chickpeas and vegetables stuffed in whole wheat pitas, perfect for a quick lunch or dinner.

Ingredients

Canned Goods

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion sliced
  • 1 cup lettuce or spinach
  • 1/2 cup hummus
  • lemon wedges for serving

Instructions 

  • Preheat the grill to medium-high heat.
  • Mix chickpeas with olive oil, smoked paprika, garlic powder, salt, and pepper. Grill for 10 minutes, stirring occasionally.
  • Toss sliced vegetables in olive oil, salt, and pepper, then grill for 5-7 minutes until tender and charred.
  • Warm pitas on the grill for 1-2 minutes each side.
  • Spread hummus inside pitas, add grilled chickpeas and vegetables, then top with lettuce or spinach. Serve with lemon wedges.

Notes

For extra flavor, add fresh herbs or a drizzle of tahini.
