Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Vegetables

  • 2 pieces bell peppers (red and yellow), sliced
  • 1 piece zucchini, sliced
  • 1 red onion red onion, sliced
  • lemon wedges for serving lemon wedges (for serving)

Instructions 

  • Mix olive oil, garlic, oregano, basil, salt, and pepper. Marinate chicken for 30 minutes.
  • Preheat grill to medium-high. Toss vegetables with olive oil, salt, and pepper.
  • Grill chicken 6-7 minutes per side until cooked through. Add vegetables in last 5 minutes.
  • Rest chicken and vegetables briefly. Serve with lemon wedges.

Notes

Marinate the chicken for better flavor and tenderness.
