A delicious and healthier twist on the classic tater tot casserole, packed with lean chicken and vegetables.

Ingredients

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb ground chicken
  • 8 oz mushrooms (sliced)
  • 1 tbsp Taco John's Potato Ole Seasoning
  • 1 can fat free cream of mushroom soup
  • 1 cup crispy crowns
  • 1/4 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 350°F (175°C).
  • Heat oil in a skillet, cook chicken and mushrooms until done. Stir in seasoning and soup.
  • Pour mixture into a sprayed 8×8 dish. Top with crispy crowns and optional seasoning.
  • Bake for 30 minutes. Add cheese, let melt, then serve.

Notes

For extra flavor, sprinkle additional seasoning before baking.
