Enjoy these wholesome cookies packed with oats, apples, and warm spices for a healthy treat.

Ingredients

Dry ingredients

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet ingredients

  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup diced apples (peeled and cored)
  • 1/4 cup raisins or chopped nuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet.
  • Mix dry ingredients in a bowl.
  • Combine wet ingredients in another bowl.
  • Mix wet into dry, then fold in apples and optional nuts.
  • Drop spoonfuls onto baking sheet and bake 12-15 minutes.
  • Cool cookies before serving.

Notes

For softer cookies, slightly underbake and let cool.
