A nutritious and delicious baked pasta dish combining lean chicken, fresh broccoli, and melty light mozzarella for a wholesome meal.

Ingredients

Pasta

  • 2 cups whole wheat pasta

Chicken

  • 1 lb boneless, skinless chicken breast, diced

Vegetables

  • 2 cups fresh broccoli florets

Dairy & Oils

  • 1 cup low-fat milk
  • 1 cup shredded light mozzarella cheese
  • 1 tablespoon olive oil

Spices & Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Optional Garnish

  • as needed fresh parsley for garnish

Instructions 

  • Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  • In a skillet, heat olive oil and cook diced chicken until browned and cooked through.
  • Steam or blanch broccoli florets until tender.
  • In a large bowl, combine cooked pasta, chicken, broccoli, milk, cheese, garlic powder, onion powder, salt, and pepper.
  • Transfer mixture to a baking dish and bake for 20-25 minutes until bubbly and golden on top.

Notes

For extra flavor, sprinkle with fresh parsley before serving.
