Ingredients

  • 1.5 pounds beef chuck roast, cut into chunks
  • 1 cup low-sodium soy sauce
  • 0.5 cup brown sugar or a sugar substitute
  • 0.25 cup rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup beef broth
  • 2 green onions chopped (for garnish)
  • sesame seeds (for garnish)
  • steamed vegetables (for serving)

Instructions 

  • Combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, red pepper flakes, and beef broth in a bowl.
  • Place beef chunks in the crock pot and pour sauce over them.
  • Cover and cook on low for 6-8 hours until tender, then shred the beef and mix back into the sauce.
  • Serve over steamed vegetables, garnished with green onions and sesame seeds.

Notes

Adjust red pepper flakes to taste for spice level.
