A quick and healthy crockpot recipe combining tender chicken with fresh broccoli, perfect for a nutritious meal.
Ingredients
Protein

boneless, skinless chicken breasts
Vegetables

broccoli florets
Liquids & Sauces

low-sodium chicken broth

tablespoon
soy sauce
Aromatics & Spices

garlic, minced

teaspoon
ginger, minced

black pepper

cornstarch (optional, for thickening)

Instructions
Combine chicken, broth, soy sauce, garlic, ginger, pepper, and salt in a crockpot.
Cook on low for 4-6 hours until chicken is tender.
Add broccoli 30 minutes before serving and stir.
If desired, mix cornstarch with water and stir into crockpot 10 minutes before serving to thicken.
Shred chicken, mix well, and serve over rice or quinoa.
Notes
For extra flavor, add a splash of sesame oil or sprinkle with sesame seeds before serving.
