Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper (to taste)

Crispy Chickpeas

  • 15 ounce canned chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 0.5 tsp paprika
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.25 tsp cumin

Green Goddess Dressing

  • 0.25 cup mayonnaise (or Greek yogurt) (for a healthier option)
  • 0.25 cup plain Greek yogurt
  • 0.25 cup packed fresh basil leaves
  • 0.25 cup packed fresh parsley leaves
  • 2 tbsp lemon juice
  • 1 clove garlic, minced

Salad

  • 2 tbsp chopped chives
  • 0.25 cup chopped celery
  • 0.25 cup chopped red onion
  • lettuce cups or whole-wheat bread (Optional: for serving)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Season chicken, sear in skillet, bake for 15-20 minutes, then shred or dice.
  • Toss chickpeas with oil and spices, bake for 20-25 minutes until crispy.
  • Blend dressing ingredients until smooth, season with salt and pepper.
  • Combine chicken, celery, and red onion in a bowl.
  • Pour dressing over chicken mixture and stir.
  • Fold in crispy chickpeas.
  • Serve in lettuce cups or on bread, or chill for later.

Notes

For a lighter dressing, use all Greek yogurt instead of mayonnaise.
