Ingredients

Salad

  • 1 cup chopped romaine lettuce
  • 1 cup chopped spinach
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped celery
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives

Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon tahini
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons water (or more, to desired consistency) (to desired consistency)

Instructions 

  • Combine lettuce, spinach, cucumber, bell pepper, celery, parsley, and chives in a bowl.
  • Combine olive oil, lemon juice, tahini, garlic, salt, pepper, and water in a blender.
  • Blend until smooth, adding more water for desired consistency.
  • Pour dressing over salad and toss gently.
  • Serve immediately.

Notes

Adjust the amount of lemon juice and tahini to suit your taste preferences.
