A delicious and healthy creamy chicken recipe that's quick to prepare and perfect for a nutritious meal.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breast
  • 1 cup low-fat greek yogurt
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Sauté garlic for 1 minute, then add seasoned chicken and cook until browned, about 6-7 minutes per side.
  • Remove chicken, add chicken broth, and simmer. Stir in Greek yogurt to make sauce.
  • Add spinach and cherry tomatoes, cook until spinach wilts, then return chicken to coat with sauce.

Notes

Use fresh herbs for extra flavor and serve with a side of vegetables or rice.
