A nutritious and easy one-pot meal combining whole wheat pasta, broccoli, and cheesy goodness for a quick, wholesome dinner.

Ingredients

Main Ingredients

  • 8 oz whole wheat macaroni
  • 2 cups broccoli florets
  • 2 cups vegetable broth
  • 1 cup milk (or almond milk)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste salt and pepper

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add pasta and broccoli, then pour in broth and milk. Stir well.
  • Season with garlic powder, onion powder, salt, and pepper. Bring to a boil.
  • Reduce heat, cover, and simmer 8-10 minutes until pasta is tender.
  • Remove from heat and stir in cheeses until melted. Serve warm.

Notes

Use fresh broccoli for best flavor and add extra cheese if desired.
