  • 2 teaspoons Cumin
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • 0.5 teaspoon Chipotle Pepper
  • 0.5 cup Mild Red Enchilada Sauce
  • 12 pieces Thin Corn Tortillas (or tortillas of choice)
  • 1.5 cups Mexican-Blend Shredded Cheese

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix ground chicken with spices, garlic, and onion; cook until browned.
  • Spread enchilada sauce over cooked chicken mixture.
  • Fill tortillas with chicken mixture and cheese, then arrange on a baking sheet.
  • Bake for 15-20 minutes until cheese is melted and bubbly.

Notes
