Ingredients

Crust

  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt

Cheesecake filling

  • 1 cup greek yogurt
  • 1/4 cup cream cheese, softened
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen raspberries
  • 1 tablespoon cornstarch

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8 inch dish with parchment.
  • Mix almond flour, melted coconut oil, honey, and salt; press into dish for crust.
  • Combine Greek yogurt, cream cheese, honey, and vanilla until smooth.
  • Fold in raspberries and cornstarch into the filling.
  • Pour over crust, bake 25-30 mins, cool, then refrigerate 2 hours before slicing.

Notes

Chill the bars thoroughly for best texture.
