Instructions
Combine chopped onion, garlic, and ginger in slow cooker.
Add chicken thighs on top.
Whisk coconut milk, tomatoes, spices, salt, and pepper; pour over chicken.
Add butter on top, cover, and cook on low 6-7 hours.
Shred chicken, mix with sauce, garnish with cilantro, and serve.
