Ingredients

Protein

  • 1 pound boneless, skinless chicken breasts

Canned Goods

  • 1 can black beans (15 oz, drained and rinsed)
  • 1 can corn (15 oz, drained)
  • 1 can diced tomatoes with green chilies (14.5 oz)

Vegetables

  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)

Broth & Spices

  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper

For Serving & Toppings

  • tortilla chips (for serving)
  • shredded cheese (for topping)
  • sour cream (for topping)
  • chopped cilantro (for garnish)

Instructions 

  • Place chicken breasts in the crockpot and add beans, corn, tomatoes, onion, and garlic on top.
  • Pour in chicken broth, add chili powder, cumin, salt, and pepper, then stir to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, then shred the chicken and stir well.
  • Serve hot with tortilla chips, shredded cheese, sour cream, and cilantro.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce before serving.
