Ingredients

Meat

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 medium potatoes, diced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Season chicken with salt, pepper, thyme, and rosemary. Sear skin-side down in a skillet with olive oil for 5 minutes.
  • Flip chicken, add potatoes, mushrooms, and garlic. Pour broth over everything.
  • Transfer skillet to oven and roast 25-30 minutes. Remove and set aside.
  • In the same skillet, add heavy cream and simmer until thickened. Return chicken and vegetables, coat with sauce.
  • Garnish with parsley and serve warm.

Notes

Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
