Instructions
Preheat oven to 400°F (200°C).
Season chicken with salt, pepper, thyme, and rosemary. Sear skin-side down in a skillet with olive oil for 5 minutes.
Flip chicken, add potatoes, mushrooms, and garlic. Pour broth over everything.
Transfer skillet to oven and roast 25-30 minutes. Remove and set aside.
In the same skillet, add heavy cream and simmer until thickened. Return chicken and vegetables, coat with sauce.
Garnish with parsley and serve warm.
