Ingredients

  • 4 pieces chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • 4 medium potatoes, sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • for garnish fresh parsley

Instructions 

  • Preheat oven to 375°F (190°C). Rub chicken with olive oil, thyme, rosemary, salt, and pepper.
  • Seer chicken until golden, transfer to baking dish with sliced potatoes. Bake for 35-40 minutes.
  • In a skillet, melt butter, sauté garlic and mushrooms. Add chicken broth and cream, simmer until thickened.
  • Pour sauce over chicken and potatoes, garnish with parsley, and serve hot.

Notes

For extra flavor, add a sprinkle of fresh herbs before serving.
