A refreshing and flavorful pasta salad featuring tender chicken, vibrant herbs, and a zesty lemon dressing. Perfect for a light lunch or a summer gathering.

Ingredients

Pasta Salad

  • 1 pound pasta (rotini, penne, or farfalle)
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion

Instructions 

  • Cook pasta, drain, and rinse with cold water. Set aside.
  • Season chicken with salt and pepper.
  • Heat olive oil in a skillet. Cook chicken for 6-8 minutes per side. Let cool and dice.
  • Whisk together mayonnaise, lemon juice, parsley, dill, chives, garlic, and Parmesan cheese.
  • Add pasta, chicken, celery, and red onion to the dressing. Toss to combine.
  • Refrigerate for at least 30 minutes before serving.

Notes

For a tangier flavor, add a bit more lemon juice to the dressing.
