A refreshing and flavorful pasta salad featuring tender chicken, vibrant herbs, and a zesty lemon dressing. Perfect for a light lunch or a summer gathering.
Ingredients
Pasta Salad
1poundpasta(rotini, penne, or farfalle)
1.5poundsboneless, skinless chicken breasts
2tablespoonsolive oil
1teaspoonsalt
1/2teaspoonblack pepper
1/2cupmayonnaise
1/4cuplemon juice(freshly squeezed)
2tablespoonschopped fresh parsley
2tablespoonschopped fresh dill
1tablespoonchopped fresh chives
1clovegarlic, minced
1/4cupgrated Parmesan cheese
1/2cupchopped celery
1/4cupchopped red onion
Instructions
Cook pasta, drain, and rinse with cold water. Set aside.
Season chicken with salt and pepper.
Heat olive oil in a skillet. Cook chicken for 6-8 minutes per side. Let cool and dice.
Whisk together mayonnaise, lemon juice, parsley, dill, chives, garlic, and Parmesan cheese.
Add pasta, chicken, celery, and red onion to the dressing. Toss to combine.
Refrigerate for at least 30 minutes before serving.
Notes
For a tangier flavor, add a bit more lemon juice to the dressing.
