A quick and nutritious baked dish combining shredded chicken, zucchini, and cheese for a satisfying dinner.

Ingredients

Protein

  • 2 cups cooked, shredded chicken
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 0.5 cup greek yogurt
  • 0.25 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon italian seasoning
  • to taste salt and pepper

Garnish

  • optional fresh basil for garnish (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix chicken, zucchini, tomatoes, cheeses, yogurt, garlic, oil, seasoning, salt, and pepper in a bowl.
  • Transfer mixture to a greased baking dish and spread evenly.
  • Bake for 25-30 minutes until zucchini is tender and cheese is bubbly.
  • Let cool slightly, garnish with basil if desired, and serve warm.
