Ingredients

Meat

  • 1.5 pounds lean beef stew meat
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups beef broth
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

  • 1 cup greek yogurt or low-fat sour cream
  • 2 tablespoons cornstarch (optional, for thickening)
  • for serving egg noodles or whole grain pasta
  • for garnish chopped parsley

Instructions 

  • Place beef in slow cooker, add onion, garlic, and mushrooms on top.
  • Pour beef broth and Worcestershire sauce over ingredients, then add thyme, paprika, salt, and pepper.
  • Stir gently, cover, and cook on low for 6-8 hours.
  • Optional: mix cornstarch with water and add 30 minutes before serving to thicken.
  • Stir in Greek yogurt or sour cream, serve over noodles, and garnish with parsley.

Notes

Use lean beef for a healthier option and add extra vegetables if desired.
