A flavorful and easy-to-make rice bowl featuring marinated chicken, black beans, corn, and fresh toppings, perfect for a quick and satisfying meal.

Ingredients

Marinade

  • 1 lb chicken breast, diced
  • 2 tablespoons honey
  • 2 tablespoons chipotle in adobo sauce, minced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste salt and pepper

Base

  • 2 cups cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained

Toppings

  • 1 avocado sliced
  • 1/4 cup fresh cilantro, chopped
  • lime wedges for serving lime wedges

Instructions 

  • Mix honey, chipotle, olive oil, garlic powder, cumin, salt, and pepper to make marinade.
  • Add chicken to marinade and let sit for 30 minutes.
  • Cook chicken in a skillet over medium-high heat for 6-8 minutes until caramelized.
  • Layer rice, beans, corn, and chicken in bowls, then top with avocado and cilantro.
  • Serve with lime wedges on the side.

Notes

For extra flavor, squeeze fresh lime juice over the bowl before serving.
