  • 1 medium spaghetti squash (about 2 pounds)
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the squash in half lengthwise, scoop out seeds, and brush cut sides with olive oil. Season with salt and pepper.
