This simple oven-baked spaghetti squash recipe yields tender, flavorful strands perfect for a healthy meal or side dish.
Ingredients
Main
1
medium
spaghetti squash
(about 2 pounds)
1
teaspoon
extra virgin olive oil
1/2
teaspoon
kosher salt
1/4
teaspoon
ground black pepper
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the squash in half lengthwise, scoop out seeds, and brush cut sides with olive oil. Season with salt and pepper.
Place cut-side down on the baking sheet and bake for 35-40 minutes until fork-tender.
Flip the squash, then use a fork to fluff the strands. Serve as desired.
Notes
Be careful when handling the hot squash and ensure it is cooked just enough to avoid sogginess.
