Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Carefully cut the squash in half lengthwise. Microwave for a few minutes if needed to soften.
Remove seeds, brush inside with olive oil, and season with salt and pepper.
Place cut side down on the baking sheet and roast for 40 minutes until tender.
Cool slightly, then shred with a fork to create spaghetti-like strands.
