This simple oven-roasted spaghetti squash recipe yields tender, stringy squash perfect as a side or base for various dishes.

  • 1 medium spaghetti squash (around 3 pounds)
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Carefully cut the squash in half lengthwise. Microwave for a few minutes if needed to soften.
  • Remove seeds, brush inside with olive oil, and season with salt and pepper.
  • Place cut side down on the baking sheet and roast for 40 minutes until tender.
  • Cool slightly, then shred with a fork to create spaghetti-like strands.

Notes

For extra flavor, add herbs or cheese after shredding.
