Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh cranberries (or ½ cup dried cranberries)
  • 8 oz brie cheese (sliced)
  • 1/2 cup dried cranberries
  • 2 tbsp honey (optional)
  • to taste salt and pepper
  • 2 tbsp olive oil
  • for garnish fresh thyme or rosemary (optional)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut a horizontal pocket into each chicken breast and season with salt and pepper.
  • Mix cranberries with honey, stuff chicken with Brie and cranberry mixture, then secure with toothpicks.
  • Sear chicken in olive oil for 2-3 minutes per side, then bake for 20-25 minutes.
  • Rest briefly, remove toothpicks, garnish with herbs, and serve hot.

Notes

Use fresh cranberries for best flavor, and remove toothpicks before serving.
