A quick and comforting one-pot meal featuring tender chicken, rice, and peas in a creamy sauce, all cooked effortlessly in an Instant Pot.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts

Grains

  • 1 cup long-grain white rice

Vegetables

  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Broth and Canned Goods

  • 1 cup chicken broth
  • 1 cup cream of chicken soup

Spices and Seasonings

  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Frozen Vegetables

  • 1 cup frozen peas

Oils and Fats

  • 2 tablespoons olive oil

Garnish

  • optional fresh parsley for garnish

Instructions 

  • Set Instant Pot to 'Sauté' and add olive oil. Sauté onion and garlic until translucent.
  • Season chicken with paprika, salt, and pepper; add to the pot and brown for 3-4 minutes.
  • Add rice, chicken broth, and cream of chicken soup; stir to combine.
  • Close lid, set to 'Manual' for 10 minutes, then release pressure naturally for 10 minutes.
  • Open lid, stir in frozen peas, and let sit for 5 minutes. Garnish with parsley if desired.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of cheese before serving.
