This flavorful and healthy Instant Pot Greek Chicken and Potatoes recipe is perfect for a quick, satisfying meal with tender chicken and seasoned potatoes.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs

Vegetables

  • 1 pound baby potatoes, halved

Seasonings & Oils

  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 lemon lemon, juiced
  • 1 cup chicken broth

Garnish

  • fresh parsley for garnish

Instructions 

  • Season chicken with salt, pepper, oregano, thyme, and paprika.
  • Set Instant Pot to Sauté, heat olive oil, and sear chicken skin-side down for 5-7 minutes. Remove and set aside.
  • Sauté garlic for 1 minute, then add chicken broth and lemon juice, scraping browned bits.
  • Add potatoes, place chicken on top, close lid, and cook on high pressure for 15 minutes. Release pressure naturally for 10 minutes, then quick release.
  • Garnish with parsley and serve warm.

Notes

For extra flavor, marinate the chicken with herbs beforehand.
