A hearty and comforting chicken and vegetable dish cooked effortlessly in the Instant Pot, perfect for a quick wholesome meal.
Ingredients
Protein

boneless, skinless chicken breasts
Vegetables
2
cups
mixed vegetables (carrots, peas, and corn)
Aromatics

onion, diced

cloves
garlic, minced
Liquids

cup
chicken broth
Spices & Oils
1
teaspoon
dried thyme
1
teaspoon
dried rosemary
to taste
salt and pepper

tablespoons
olive oil

tablespoon
cornstarch (optional, for thickening)
Instructions
Set Instant Pot to 'Sauté' and heat olive oil. Sauté onion and garlic for 2-3 minutes.
Season chicken with salt, pepper, thyme, and rosemary. Brown each side for 3 minutes.
Add chicken broth, scrape browned bits, then layer vegetables on top.
Close lid, set to 'Sealing', pressure cook for 10 minutes, then natural release for 5 minutes.
Optional: Mix cornstarch with water, stir into pot, and simmer until thickened.
Notes
For a thicker sauce, add cornstarch slurry at the end.
