A hearty and comforting chicken and vegetable dish cooked effortlessly in the Instant Pot, perfect for a quick wholesome meal.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Vegetables

  • 2 cups mixed vegetables (carrots, peas, and corn)

Aromatics

  • 1 piece onion, diced
  • 3 cloves garlic, minced

Liquids

  • 1 cup chicken broth

Spices & Oils

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions 

  • Set Instant Pot to 'Sauté' and heat olive oil. Sauté onion and garlic for 2-3 minutes.
  • Season chicken with salt, pepper, thyme, and rosemary. Brown each side for 3 minutes.
  • Add chicken broth, scrape browned bits, then layer vegetables on top.
  • Close lid, set to 'Sealing', pressure cook for 10 minutes, then natural release for 5 minutes.
  • Optional: Mix cornstarch with water, stir into pot, and simmer until thickened.

Notes

For a thicker sauce, add cornstarch slurry at the end.
