A hearty and flavorful chicken and vegetable dish cooked quickly in the Instant Pot, perfect for a comforting weeknight dinner.

Ingredients

Protein

  • 2 lbs boneless, skinless chicken breasts

Liquid

  • 1 cup chicken broth

Vegetables

  • 3 cups mixed vegetables (carrots, peas, corn, green beans)

Aromatics

  • 1 unit onion, chopped
  • 2 cloves garlic, minced

Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper

Oils and Fats

  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions 

  • Press 'Sauté' on the Instant Pot, add olive oil, then sauté onion and garlic until softened.
  • Season chicken with salt, pepper, thyme, and rosemary, then add to the pot.
  • Pour in chicken broth, add vegetables on top, close lid, set to 'Sealing', and cook on 'Pressure Cook' for 10 minutes.
  • Allow natural release for 5 minutes, then quick release remaining pressure.
  • Stir in butter until melted, then serve warm.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
