A hearty and flavorful chicken and vegetable dish cooked quickly in the Instant Pot, perfect for a comforting weeknight dinner.
Ingredients
Protein

boneless, skinless chicken breasts
Liquid

chicken broth
Vegetables

mixed vegetables (carrots, peas, corn, green beans)
Aromatics

onion, chopped

cloves
garlic, minced
Seasonings

dried thyme

teaspoon
dried rosemary

Instructions
Press 'Sauté' on the Instant Pot, add olive oil, then sauté onion and garlic until softened.
Season chicken with salt, pepper, thyme, and rosemary, then add to the pot.
Pour in chicken broth, add vegetables on top, close lid, set to 'Sealing', and cook on 'Pressure Cook' for 10 minutes.
Allow natural release for 5 minutes, then quick release remaining pressure.
Stir in butter until melted, then serve warm.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon before serving.
